If you're going to bumper-pull (ball in the receiver on the back) then either truck would work well for you. If you plan on doing any gooseneck pulling, you could be okay with either truck depending on how the trailer is loaded. Lowering rear and getting a better ride.
You must be hard on the throttle all the time - my last 6.4 would take a hit in mileage when I loaded up the bed with weight, though not as bad as pulling. Normally I'd say you're correct, HOWEVER it sounds like he's put a LOT of wiring/computer from a '20 into this '14, so not sure if using the '14 module would fix this or not. Oh yeah, we've got some good long grades here too, my old 6.4 did just fine with them as long as I let it wind out some. The last part can sometimes be the biggest issue. He's in about the same ballpark as I am, I have just under 2400 lbs of payload with my '22 2500 6.7, I'm also a Bighorn. They add a LOT of options to Laramies that really cut down the payload.
