Oil temp variation: Explanation?

Looking for an explanation.
2021 Ram 2500 diesel pulling my 7000 lb TT. Going uphill out of Salt Lake cityheading east on I80. Trying to stay at 55 hanging in the right lane, etc.
coolant temp rises to 212 F, trannt temp steady ar 170 F, oil temp showing 220 F.
Over the crest, coolant dropping as expected to 190, tranny drops to its normal 168. Oil temp showing 146. A few minutes later oil temp back up to 203 which is pretty normal.
Why/ how can the temp drop so low to the 140s?
That seems very odd to me, hopefully someone has a logical explanation?
Not the first time it’s happened but i paid close attention today.

Dredger is right and you are correct to question what you were seeing, no way it really dropped like that. Recalculating happens with the GPS all the time, not surprised it happens with oil temperature too.

Thanks for the replies. Still seems odd to me but its an explanation.
